Ingredients:

  • 500g / 1 lb chicken breast (2 pieces), boneless and skinless

  • 60 g / 1/4 cup flour or cornflour

  • Salt and pepper

  • 2 garlic cloves, grated

  • 3 1/2 tbsp (50g) unsalted butter (or 2 1/2 tablespoons extra virgin olive oil)

  • 1 tbsp soy sauce

  • 1 1/2 tbsp vinegar (white, apple cider or other clear vinegar)

  • 1/3 cup (90 g) honey or maple syrup

  • Fresh parsley / green onions, chopped (optional)

  • Top with parsley or green onions (optional)

Instructions:

  1. Cut each breast in half to create 4 steaks in total. Sprinkle each side with salt and pepper.

  2. Coat the chicken in flour in a shallow dish.

  3. In a large skillet melt 2.5 tbsp of the butter over high heath - hold back about 1 tsp for later.

  4. Place chicken in the skillet and cook for 2 - 3 minutes until golden. Turn and cook the other side for about 1 minute.

  5. Turn the heat down to medium high.

  6. Make a bit of room in the pan and add garlic and top with remaining butter. Stir the garlic once butter melts.

  7. Add vinegar, soy sauce and honey. Stir pan to combine. Bring sauce to simmer for 1 minute or until slightly thickened.

  8. Turn chicken to coat in the sauce. If sauce gets too thick, add a little water and stir.

  9. Remove from stove immediately and place the chicken on plates and pour over remaining sauce.

  10. Top with parsley or green onions (optional)
